How to make Pin Soda by Scott Thomas
Ingredients:
1-2 cups of safe, edible pine needles (like White Pine, Fir, or Spruce tips)
2-4 tablespoons of sugar or honey (adjust to taste)
About 2 cups of filtered water
Instructions (Fermentation Method):
Clean your pine needles gently in cool water; do not over-wash, as you need the natural wild yeast on the needles.
Combine pine needles, sugar, and water in a sterilized quart-sized glass jar or flip-top bottle, leaving an inch of headspace.
Seal the container, shake to dissolve the sweetener, and place in a warm spot, avoiding direct sunlight.
Ferment for 2-7 days, "burping" the bottle (releasing the lid briefly) once daily to prevent excessive pressure buildup.
Strain the soda once it's fizzy and slightly tangy, then chill and enjoy!
